The easiest way to explain would be for me to post up my Video diaries of Minami 13 and 14. (sadly I went cameraless to Minami 15 simply because carrying a videocamera everywhere can be a slight pain...maybe XD)

The Con lasts for the whole weekend, starting on Friday afternoon/evening when most of the con attendees will turn up and register. During this time, there's a bar and main lounge area where everyone can chill and have fun. You'll already see a lot of cosplayers even at this stage, and where there's cosplayers, there's people with cameras. XD
At the start of the evening they have the Minamicon Opening Ceremony which will involve everyone going into a room, eating from a buffet table and further socialising (and some fun games, like Pinata hitting and Twister if I recall right..) whilst the staff get everything set up for the speech and whatnot.
Then, the actual opening show kicks off, which is kind of like a glorified game show with events, where volunteers will be made fun of on stage, as you can see in both of my videos (definitely in 14 anyway...)
When the show is over, there's further socialising in the main room, followed by some late night events such as the Anime Disco (basically a nightclub playing all your favourite J-Pop and Anime tracks), and uh...I wouldn't know since I spend the whole time dancing in the disco area all night.
There's also a lot of Video Rooms around where various episodes of Anime are being shown here there and everywhere. These are ongoing throughout the weekend.
Friday Nights are always pretty much the same, they're great and never usually change.
I'll post about Saturday and Sunday later on, but to summarise; Saturday night is always Karaoke Night and the Masquerade. Sunday is the Closing Ceremony and usually the time for us WA chaps to go out into Southampton and wreck up the place.
